My BBM Journey: Between Challenges and When the Bell Rings

Hi everyone!

How are you guys doing with this little gap in between Bikini Body Mommy and the re-release of 2.0 on September 8th?

For me it has been busy as ever since the challenge wrapped up. My baby girl started Kindergarten and my sister is also in school, she is enrolled in high school here in Western KY. The last week has been a whirlwind of last minute appointments and paper work and orientations and all the things that go along with kids being in school. However, this is all brand new for me, the first year I’ve been a mom with school age children, and since I was homeschooled after 2nd grade, I find the whole thing even more of a challenge to grasp and get the hang of.

But here we are, on day 3, and everything is beginning to be more routine and the girls are doing great so far, I’m proud of them! As for the workouts, I have made a point to plan them carefully into our day. Until the new challenge starts we are picking random days from 2.0 and doing one as soon as I pick the girls up in the afternoon. It gives them a little break mentally before we dive into evening home work and adds a little energy boost to the roughest part of the afternoon.

I’m still trying to get my run in after I drop the girls off in the morning, but to be honest, little man has kept me busy without his Sissy to play with and I have a deadline on chores and house work since the evenings are dedicated to home work, making dinner, and timely bedtime. Thankfully my nutrition is better. Since it’s just me and little man, and I’m busier in the morning, I have been eating smaller portions of either left overs, fresh fruit, or salad since those are quick and easy to grab.

I am also packing the girls’ lunches, and have been getting some ideas from Pinterest, of course, to keep from sending them with the same old thing. Feeding my girls healthy, nutritious food is my absolute passion. I firmly believe that if they are going to think and perform at their best, they have to be fueled properly. So with that, I will post my very first school lunch recipe post. Tell me what you think. ๐Ÿ™‚

Ham and Cheese Rolls with Cranberry Walnut Spread

Cranberry Walnut Spread

1/2 cup dried cranberries

water

1/2 cup walnut halves

1/2 cup plain greek yogurt

Rehydrate cranberries by placing them in a pan with just enough water to barely cover them. Bring to a simmer and cook for about 5 minutes or until the cranberries are plump and most of the water is absorbed. Drain any excess liquid. Set aside to cool for 10 minutes.

Place cranberries and walnuts in a food processor and process for about 3 minutes. Scrape down the sides and add the yogurt. Process for another 2 minutes till everything is well blended. Chill for at least 30 minutes before using. Store in the refrigerator.

Makes about 1 cup of spread

Ham and Cheese Rolls

4 slices of premium deli ham

1 slice of premium deli swiss cheese, cut into four strips

4 small leaves of leaf lettuce

2 tsp. cranberry walnut spread

Lay down a slice of ham, spread with about half a teaspoon of cranberry walnut spread, layer on the cheese and the lettuce and roll up the ham. Setting it down on it’s seam will help it stay rolled. Repeat with the rest of the ingredients.

NOTES: I made these for the first day of school and the kids loved them. They are a great alternative to a sandwich. You can really use any kind of meat or cheese, and even have fun with these. Rolling up some thinly sliced granny smith apple in addition to or in place of the lettuce adds crunch and variety, or cucumber slices, or julienned carrot, you name it. So many variations are possible here. Today I sent 4 of these rolls, a small container of bite sized watermelon, a yogurt, and a little baggy of chocolate, cranberry, mixed nut trail mix. Who says school lunch has to be boring chips and a sandwich?

My BBM Journey: Day 90

Day 90.

This time has flown by! Let me first say how monumentally proud I am of myself for sticking to this challenge and not only NOT missing very many days, but doubling up on most of them too. I missed a workout the other day and did the killer death march day AND the HIIT back to back the next day, one workout after the other. I died immediately following, but I got it done. Little triumphs like that, this challenge has been full of them and I am incredibly proud.

I stepped on the scale this morning and was not surprised to see a total weight gain over the 90 days of 3 lbs. My weight is down from day 75, but I have fluctuated this entire challenge between 209 and 212 for the most part. I think it’s pretty safe to say I lost no weight. However….. are you ready for this?

I have lost a grand total of 20.5 inches!! That is fantastic!! But oh, so much more! I feel strong, I feel healthy, my skin looks incredible, my fine lines are disappearing more each week, my cellulite has decreased dramatically, my lower back (which has troubled me for most of my adult life) is stronger and almost never hurts, I’m more limber, I have so much more energy and motivation, and I could go on and on. I have gained so much more than just a slimmer body.

I definitely have a good ways to go still. I am definitely on board for the next challenge, both the re-release of 2.0 and 3.0 in January. I have goals to meet and I’m excited! I can’t wait to see how much more progress I will make.

It is all about the journey, it has ceased to be about the results. The results are happening, little by little, but this journey is amazing. Keep going mommies! Did you get off track? Fall off the wagon? You can just get back on! Did you finish but not as strongly as you believe you can? Here’s your chance to beat your old records, to do even better. I am going to keep going. I believe I CAN reach my goals. I believe I WILL! I am going to look back a year from now and see amazing changes. I already see them.

My BBM Journey: Day 76

I thought in celebration of edging back on track with my nutrition I would share a yummy recipe I made the other day for lunch. ๐Ÿ™‚

Summer Garden Orzo

1/2 of a 1 lb. box orzo pasta

1 large purple onion, diced

1 medium zuccini, diced

1 medium red bell pepper, diced

1 1/2 cups halved grape tomatoes

1 1/2 – 2 cups chicken broth

1/2 cup ricotta cheese

1 TBL olive oil

1/2 tsp. garlic powder

1 tsp. fresh minced basil

1tsp. fresh minced parsley

salt and pepper

 

In a large skillet heat oil. Add onions, peppers, and mushrooms. Add salt to help sweat the water out of the veggies. When the onions begin to appear translucent, add the zuccini, garlic powder, orzo, and enough chicken broth to just cover everything. Let it simmer, stirring often to prevent sticking to the bottom of the pan. Cook just until orzo is almost done, about 5-7 minutes, then add the tomatoes and continue to cook until the orzo is firm, but no longer crunchy. You may need to add a little broth during this process. Be careful not to add too much at a time so the mixture won’t become soupy. Stir in the ricotta cheese, fresh herbs, and check for enough salt and pepper. Remove from heat and serve immediately.

Prep time: approx. 20 minutes

Cook time: approx. 15 minutes

Recipe cost: approx. $4.50

 

NOTES: In this particular picture, I had run out of grape tomatoes, so I used a can of diced tomatoes. I just added them when I added the orzo and reduced the broth by a little, using the juice from the canned tomatoes. This dish is so delicious and versatile, you could really add any veggie you like, fresh peas, broccoli florets, yellow squash, etc. It can easily be made vegetarian or vegan by using vegetable broth or tomato juice instead of chicken broth, and omitting the ricotta cheese, which I add for a little creaminess. This is quick and easy and my whole family loves it!

My BBM Journey: Day 59

A beautiful run this morning in the humidity. Even in the summer warmth, the morning is my favorite time of day, things are so fresh and bright. We had a little thunderstorm last night, so everything was especially clean and fresh. We ended up getting really busy last night and didn’t get our BBM work out done, but we did have a killer run in the morning, so it wasn’t a total loss. Still, I now feel compelled to do yesterday and today back to back this evening. If you don’t see any more blog posts it is because I followed through on this plan and died. ๐Ÿ˜‰

I get to harvest my very first tomatoes and zuccini that I grew myself in the garden, either today or tomorrow. That’s exciting. Nothing like fresh produce! And that means I need to visit the farmer’s market really soon. Can’t wait!

We have a weigh in day tomorrow. (Yay.) I also have a jam packed day with a rigid schedule, so that will be fun and interesting. At least the weigh in and remeasure day falls before the holiday. Clarksville TN, which is the nearest “big” town, is having it’s fireworks show on the 3rd rather than the forth, we’re hoping to take the kids to see that. Knowing that day would be crazy busy, I did the 4th of July photos a few days early. (Yesterday.) Here’s my adorable crew.

My BBM Journey: Day 54

We are flying through this challenge, people! The days are going by so fast. I am staying very busy because I have more energy and motivation than I have in a long time, I love it! We are fast approaching another weigh in and remeasure day and I am DETERMINED to see some change on the scale for the better. I don’t care if it’s a few ounces, I am ready to see that needle drop a little. I see definite changes in my body, it is more muscular and my love handles and tummy are finally getting tighter, and the most change has been to my skin itself, it is very smooth, especially on my legs where the cellulite likes to gather, but on my tummy and arms and over my ribs, the skin just appears very toned and smooth. I’m sure the great hydration is playing a huge part in my skin’s appearance, especially the plump, youthful quality to the skin surface on my face. All these little things add up to progress, don’t make the mistake of assuming the scale is the only place you can benefit from this routine.

So, how about another recipe? Everyone likes fresh ideas for meals, right? And this one is a crockpot meal that is very easy to throw together on a busy day.

Crockpot Italian Sausage and Sweet Potatoes

6-8 small sweet potatoes or 3-4 large ones, peeled and chopped into half inch cubes

4 Italian sausage links

1 large onion, chopped

1 cup chicken broth

1 1/2 – 2 tsp. kosher salt

1/4 tsp freshly ground black pepper

1/2 tsp. garlic powder

1/2 tsp. paprika

olive oil

Place the sausages on the bottom of the crock pot, then add the onions and sweet potatoes on top, followed by the salt and spices. Pour the chicken broth evenly over the top, turn the cooker on high, and cover. Let cook until the sweet potatoes are tender. (Approx. 1 hour and 15 minutes, depending on each individual cooker.) Fish the sausages out and brown them evenly in a skillet with a little olive oil. Let them rest for five minutes and then slice them into 1/4 inch thick slices and return them to the crock pot. Stir everything together gently, taste for adequate seasoning, ย and serve with a dollop of plain greek yogurt if you like.

Cook time: approx. 1 hour 20 minutes

Recipe cost: approx. $6.50

 

NOTES: The family loved this. It was very easy to throw together and let it cook while I was busy with house chores, and it was filling. I can buy a 3lb. bag of sweet potatoes at Aldi for $1.99 in my area, so I like to keep them handy and this was a refreshing way to prepare something we eat a lot of.

My BBM Journey: Day 53

We just got done with our morning run. I had to knead my lower back and oblique muscles for 15 minutes prior to that just to get the stiffness remotely mobile. We did the HIIT work out instead of the strength work out last night and that 1:30 on :30 off format is killer. I have not woken up this sore and stiff the whole challenge, but I am super loving the intensity because in only one week I have seen major progress in my abs and hips, those are my problem areas, and I’m LOVING what’s happening there!

My awesome mom in law knows what just-because-gifts will make us jump for joy, she found these terrific insulated mugs in a lovely 32 oz. size complete with straw and happy colors, and we LOVE them. Our other cups were kind of small and we would have to stop and fill them mid workout.

My little garden is still growing, my flowers are blooming and tiny cucumbers and zuccini are making their appearance, so we’ll soon be enjoying those.

And most exciting, my first tomatoes are starting to turn red. The first home grown tomato is the most anticipated event in our house!

My BBM Journey: Day 52

It has been crazy around here. My schedule (such as it is) has gotten a little off track. I had been getting the kids into bed by 8:30, which put me asleep by 10ish, but the last few nights it’s been 12 and 1 AM before I drift off. That sets my morning up for tired mode which stretches out my coffee time, which sets the whole day back as any slight deviation from one thing leads to epic disruption of several hours by the time the day is through. I’ve GOT to get into bed at a decent time tonight. Sheesh!

We had been getting our workout done first thing in the morning and running in the evenings, but since my hubby’s schedule changed and he is here in the morning and gone in the evenings, we switched it up so he could keep an eye on the kids while we run. (And by keep an eye on them I really mean snore away while they are still sleeping.) These last couple mornings I just haven’t gotten the run in, so I guess it’s a good thing this weeks format switch is murdering me. 1:30 of mountain climbers is beyond brutal, I actually woke up sore this morning from last night’s work out.

I spent the first half of yesterday running around town shopping and am a happy camper with stocked shelves and fridge. So to celebrate, how about a recipe post? I know you guys love these. ๐Ÿ™‚

Clean Eating Egg Salad on Tomato Rounds

8 large eggs, hard boiled, peeled, and chopped

3 mini sweet peppers, diced

1/2 small purple onion, minced

1/3 cup plain greek yogurt

1/2 teaspoon minced fresh dill

1/8 teaspoon garlic powder

salt and pepper

vine ripened tomato slices

paprika and fresh chopped parsley for garnish

Mix all ingredients together. Add salt and pepper to taste. Arrange tomato slices on a plate, salt and pepper them before spooning egg salad on top. Sprinkle a little paprika and fresh parsley on top as garnish.

Recipe cost: approx. $3.75

NOTES: Ideally I would have used home grown or locally grown vine ripened tomatoes, but “vine ripened” from the super market had to do today. I definitely recommend the ripest tomato you can get hold of for this. I stay away from the big beef steak, slicer type tomatoes you buy at the grocery store as the flavor is never there. They pick them far too green for the flavor to ever be there. A medium sized vine ripened tomato or plum style tomato will be your best bet if you can’t get your hands on something from the farmer’s market or grow them yourself.

My kiddos love this recipe and I love that it’s low carb. It makes a great light lunch, perfect for the summer, and is super quick to whip up, especially since I usually keep a bunch of eggs boiled and ready to peel in the fridge anyway, they make for a great snack.
